Ingredients and Variations

MEAT: Use leftover chicken or a store bought rotisserie chicken to make things quick! Chicken, turkey, ground beef or sausage, or even shrimp or crab can be used in this recipe. Or make them meatless and use chick peas, tofu, or even scrambled eggs.

FILLING: Mango chutney is commonly found in supermarkets, but you can use peach or apricot preserves instead. Peanut butter, curry seasoning, and a dash of lime juice balance out the flavors for the perfect bite! Yogurt can be replaced with sour cream or, for a thicker filling, cream cheese. Crunchy peanut butter adds some nice texture, but if you’ve only got smooth PB on hand, add some chopped peanuts, or any chopped nut!

Recipe Variations: Make wonton cups to suit the theme of your menu!

  • Mexican: Taco meat, diced jalapenos, corn, sliced black olives, and shredded Monterey Jack or crumbled Cotija cheese makes a great Tex-Mex version. Or jalapeno popper-style with just chopped jalapenos mixed into cream cheese.
  • Asian: Shrimp or crabmeat mixed with cream cheese, sliced green onions, and chopped water chestnuts.
  • Thai: Seasoned ground pork, diced mushrooms, sliced green onions, roasted peanuts, and Sriracha sauce.
  • Buffalo: Shredded chicken and cream cheese mixed with buffalo sauce. Top with thinly sliced celery and blue cheese crumbles.

How To Make Chicken Wonton Cups

  1. Cut wonton wrappers into quarters and bake (as directed in the recipe below).
  2. Bake, cool, and cut the chicken into small pieces.
  3. Mix the remaining ingredients (except chives) and fold in the chicken.
  4. Scoop chicken filling into wonton cups and garnish with chives.

Chicken Wonton Cups

These tasty homemade chicken wonton cups are an easy and delicious appetizer that can be made as sweet or spicy as you like!

Ingredients  

  • 36 wonton wrappers
  • oil* for brushing
  • 3 boneless skinless chicken breasts
  • ¼ cup plain yogurt +2 tablespoons
  • ¼ cup mango chutney
  • 3 tablespoons crunchy peanut butter
  • 1 tablespoon fresh lime juice
  • 1 teaspoon curry paste
  • ½ teaspoon curry powder
  • 3 tablespoons chives chopped, for garnish (or green onion)

Instructions 

  • Preheat oven to 325°F.
  • Cut a stack of wonton wrappers into 4 squares. Brush one side with oil. Press one square into the bottom of each mini muffin well to form a cup. Bake for 5-7 minutes until lightly browned. Remove from muffin tin and cool on a paper towel or cooling rack.
  • Bake chicken breasts on a parchment-lined baking tray for about 50 minutes or until chicken reaches 165°F and is just cooked. Or poach chicken in a frying pan with boiling water until just cooked to 165°F. Cool chicken and dice into small pieces.
  • In a medium bowl, mix together yogurt, chutney, peanut butter, lime juice, curry paste, and curry powder. Add chicken and mix thoroughly.
  • Add 1-2 teaspoons of filling to each cup. Garnish with chives.

Notes

  • *Nutrition is calculated without oil.
  • 36 wrappers cut into 4 squares will make 144 wonton cups. Make up to a day in advance and serve at room temperature. 
  • Store leftover baked wrapper cups in a paper towel in a zip-top bag.
  • Wonton cups are perfect for using up leftover meat, veggies, and cheese.
  • Refrigerate any leftover chicken mixture in a sealed container for 2-3 days.
