Pimento cheese spread is made with savory spices blended into cheddar, cream cheese, mayo, and pimentos.

What’s in a Pimento Cheese Sandwich?
Cheese: Sharp cheddar is your best bet for the boldest flavor, but you can use mild, Velveeta, or even some blue cheese or feta.
Cream Cheese: Whole fat or lite cream cheese adds creamy texture plus blends better and faster if it’s used at room temperature.
Mayonnaise: Any brand will do. Avoid sandwich spreads like Miracle Whip dressing because they’re too sweet against the cheddar cheese and pimentos.
Bread: This recipe calls for white bread for the authentic golf club recipe, but you can use any bread you like, or even tortillas.
Variations
- Some like it hot. Try it with ½ -1 diced fresh jalapeno (seeds removed), or a small can of jalapenos, or a splash of Tabasco.
- Add color and flavor with optional sundried tomatoes or black olives.

How to Make Pimento Cheese Sandwiches
Pimento cheese sandwiches are full of fresh and zesty flavors.
- In a large bowl, add all pimento cheese ingredients (recipe below) and mix thoroughly.
- Spread cheese from edge to edge equally on 4 slices of bread and top with remaining slices.
- Cut on the diagonal and serve.
Storing Leftover Pimento Cheese
- Keep pimento cheese separate from bread in a covered container in the refrigerator for up to 7 days.
- We do not recommend freezing pimento cheese because it will become grainy when thawed due to its high dairy content.
- Use refrigerated leftovers as a spread on burgers, wraps, or dip served with crackers, chips, or veggies.

Pimento Cheese Sandwich
Equipment
Ingredients
- 3 cups shredded mild cheddar cheese orange
- 2 cups shredded sharp cheddar cheese white
- 4 ounces blue cheese crumbled
- 1 cup freshly shredded Parmesan cheese
- 1 cup mayonnaise light if preferred
- 4 ounces diced pimentos well drained
- 2 Tablespoons dijon mustard
- ¼ teaspoon kosher salt or to taste
- ¼ teaspoon freshly ground black pepper or to taste
- 1 loaf white bread
Instructions
- To a large mixing bowl, add all ingredients (except bread) and mix to combine thoroughly*. Taste and season with additional salt and pepper as desired.
- If time permits, cover and refrigerate for 2 hours. Remove from refrigerator 30 minutes before making sandwiches.
- Divide pimento cheese mixture evenly between 6 slices of bread, spreading from edge to edge. Top each slice with a second slice of bread. Cut on the diagonal and serve!
Notes
- Pimento cheese sandwiches taste best at room temperature.
- Store in an airtight container in the refrigerator for up to 7 days. Do not freeze.
- Add some extra heat by mixing in ½ – 1 diced jalapeno (seeds removed)
