What’s in Chicken Broccoli Bake?

  • Chicken: Boneless, skinless chicken breasts, thighs, or cutlets are great in this recipe. If you’re short on time, use a bag of frozen (and thawed) meatballs.
  • Broccoli: Broccoli florets soak up all that cheesy sauce, but you can use other veggies like cauliflower, green beans, zucchini, or a bag of frozen veggie medley if prep time is short.
  • Sauce: This uncomplicated ‘no roux required’ sauce is made by whisking broccoli cheese soup with mayo, lemon juice, and a dash of warm, earthy curry powder. No need to buy the name brand if a store brand is available. Swap out the condensed soup for cream of celery, cream of chicken, or cream of mushroom. Make a low-carb chicken broccoli bake using a jar of Alfredo sauce and mozzarella cheese, and crushed pork rinds for a crispy topping.
  • Variations: Extras to add in broccoli chicken bake are sun-dried tomatoes, sliced black olives, or green chilis for a spicy kick. Make a crispy topping by sprinkling bacon bits or seasoned breadcrumbs.

Storing Chicken Broccoli Bake

Store leftover chicken broccoli bake covered in the refrigerator for up to 4 days. Stir in a little milk to loosen the sauce before reheating in the microwave or on the stovetop and serve with a sprinkle of fresh cheddar if desired.

Chicken broccoli bake is great for work day lunches, simply reheat and enjoy.

Freeze individual portions for up to 2 months by cooling completely then wrapping in foil, then plastic wrap. When you’re ready to reheat, just remove the plastic and pop into the oven.

  1. Do you have any substitute for the cream soup? I had to cut way back on my sodium this past year and now so much salt gags me.. The recipe looks luscious but too much sodium for my taste buds now..

    1. Hi Nancy, I have seen (and often use) low sodium versions of the soup. You could also create a cream sauce, or a cheese sauce, and season it with a bit of Italian seasoning in addition to the curry. Enjoy the recipe!

    1. You could add any seasoning that you prefer, like Italian seasoning, or basil. Something interesting Amy, it was this dish that made me enjoy curry! I was pleasantly surprised!
