GROUND BEEF: Fat adds flavor, so choose ground beef with a 80/20 mix that keeps the burgers juicy. A 90/10 mix might have fewer calories, but needs a shot of fat like bacon grease (or bacon bits), or a tablespoon of oil to keep them moist. Ground beef can also be mixed with a little ground sausage or pork, too.

How to Make Hamburger Patties

This easy method ensures burger success every single time, whether you use a grill, an air fryer, or the stovetop!

  1. Gently combine all ingredients (except cheese slices) in a large bowl.
  2. Make 6 equal patties and chill on a plate.
  3. Cook on the grill (per recipe below) until they reach 160°F, flipping halfway through.
  4. Add a slice of cheese and cook a couple more minutes before removing from heat.

On the Stovetop:

  1. Cook patties in a cast-iron skillet over medium-high heat until they reach 160°F , flipping halfway through.
  2. Add a slice of cheese and cook one more minute before removing from heat.

In the Air Fryer:

  1. Preheat air fryer and cook patties in a single layer until they reach 160°F, flipping halfway through.
  2. Add a slice of cheese and cook one more minute before removing from heat.

Note: No matter which method is used for this hamburger patty recipe, use a digital thermometer for accuracy and to ensure the burgers are extra juicy!

Tips for Perfect Patties

  • Handling raw meat can pose hazards so be sure to use disposable gloves.
  • Do not over mix, or over cook, the meat as the patties may become tough.
  • Use patty makers for shaping consistent patties, especially if you are making burgers for a crowd or to freeze for later.
  • Make sliders! Shape 12 small patties instead of 6 large patties, and continue at Step 4 in the recipe below.
  • Press your thumb in the center of the patties before they go on the grill. This indent will ensure they cook evenly.
  • Rub a little cooking oil on the grate to make sure the burgers don’t stick.
  • If making raw hamburger patties to cook later, freeze them on a baking sheet and then place in a zippered bag for longer storage. Cook from frozen for about 5 minutes on each side.

Hamburger Patties

Make the best, juicy and delicious beef burgers with this easy hamburger patty recipe.

Ingredients  

  • 2 pounds lean ground beef
  • ¼ cup ketchup
  • 2 egg yolks
  • 2 Tablespoons Worcestershire sauce
  • 2 Tablespoons dried onion flakes or to taste (or finely chopped red onion)
  • 2 teaspoons yellow mustard
  • 2 cloves garlic minced
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 6 slices cheese optional

Instructions 

  • Add everything (except cheese slices) into a large bowl.
  • Starting with a spoon, then use your hands, gently mix together until combined. Do not overmix, as the patties may become tough.
  • Divide evenly and shape the meat into 6 balls. Press and shape the balls until they form ½-inch thick patties.
  • Place patties on a baking tray (or plate) and refrigerate for 30 minutes to firm them up (and make them easier to cook).
  • Preheat barbecue to medium high heat (425˚F – 450°F). Cook for 5 minutes on the first side (lid closed), flip and cook for about 5-6 minutes more, or until fully cooked. Do not press, this will release the juices and they may become dry. If adding cheese, add during the last 2-3 minutes of cooking and close the lid to finish. Cook burgers to 160°F, and use an instant read thermometer for accuracy.
  • Remove cooked burgers from heat. If desired, grill buns on high heat for about one minute, and watch carefully until they are ready.
  • Prepare and serve with toppings such as sliced tomatoes, lettuce, sliced pickles, and your favorite condiments.

Notes

  • Nutrition is calculated without cheese slices.
  • To freeze patties:
    • place on a parchment lined cookie sheet, cover with plastic wrap and freeze for 6 hours or overnight.
    • remove from cookie sheet and place in a zip top bag for storage.
  • To cook from frozen:
    • cook for 5 minutes on the first side, flip and cook for 5 minutes more.
    • move to indirect heat for 10-15 minutes or until fully cooked.
