Ingredients and Variations
Meat: While regular ground beef will work in this recipe, it’s recommended to use a lean ground beef. A 80/20 lean-to-fat ratio is a good choice for ground beef. Try adding a bit of ground pork to make the patties more juicy.
Egg: The two egg yolks in this recipe deepen the flavor while binding the meat and other ingredients. You can substitute one whole egg instead of two yolks if you prefer.
Add-ins: Experiment adding some Parmesan cheese, or cheese of your choice, into the mix.
Seasonings: Use our savory and tangy mix of seasonings in the recipe below. Or get creative and try a smoky Cajun or Jerk blend, or piquant fajita, chili, or taco spice. Experiment with aavory Italian herbs or hearty steak seasoning.
How to Make Hamburger Patties
- In a large bowl, mix all ingredients except the cheese slices.
- Shape into patties using your hands, or a patty press, and grill (as per the recipe below).
- Melt cheese slices on top during the last 2-3 minutes of cooking. Serve on toasted buns.
How To Air Fry
- Place patties in the air fryer basket in a single layer. Do not crowd.
- Cook at 375° for 9-12 minutes, flipping halfway through.
Note: To use the air fryer, cook patties in 2- 3 batches, depending on the size of your air fryer.
Storing Hamburger Patties
- Wrap leftovers and store in the refrigerator for 3-4 days, or in the freezer for up to four months.
- Frozen hamburger patties are ideal for quick meals, picnics, and barbecues. Prepare the mix according to the recipe below, and shape into patties. Stack into freezer bags, separated by squares of wax paper or parchment, and freeze for up to 4 months.

Ingredients
- 2 pounds lean ground beef
- ¼ cup ketchup
- 2 egg yolks
- 2 Tablespoons Worcestershire sauce
- 2 Tablespoons dried onion flakes or to taste (or finely chopped red onion)
- 2 teaspoons yellow mustard
- 2 cloves garlic minced
- ½ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- 6 slices cheese optional
Instructions
- In a large bowl, add lean ground beef, ketchup, egg yolks, Worcestershire sauce, onion flakes, garlic, mustard, salt and pepper.
- Gently mix, starting with a spoon then using your hands. Do not overmix, as the patties may become tough.
- Divide meat evenly and shape into 6 balls. Press and shape the balls until they form ½-inch thick patties.
- Place patties on a baking tray (or plate) and refrigerate for 30 minutes to firm them up (and make them easier to cook).
- Preheat barbecue to medium high heat (425˚F – 450°F). Cook for 5 minutes on the first side (lid closed), flip, and cook for about 5-6 minutes more, or until fully cooked. Do not press, this will release the juices and they may become dry.
- If adding cheese, do so during the last 2-3 minutes of cooking and close the lid to finish. Cook burgers to 160°F, and use an instant read thermometer for accuracy.
- Remove cooked burgers from heat. If desired, grill buns on high heat for about one minute, and watch carefully until they are ready.
- Prepare and serve with toppings such as sliced tomatoes, lettuce, sliced pickles, and your favorite condiments.
