Gravy: This is where the magic happens! Even without the wine, this gravy has a rich flavor made from the seasoning mixes and soup.
Variations: Add sliced mushrooms, onions, or a bag of frozen veggie medley (no need to thaw).
How to Make Beef Tips and Gravy
Easy to prep, cook, and serve from one pot!
- Brown beef tips in oil in a large Dutch oven (as directed in the recipe card below).
- Whisk together broth, wine, and gravy, au jus, and onion soup mixes.
- Pour the broth mixture and mushroom soup over the beef.
- Bring to a boil, reduce to a simmer, and cook until the beef is tender.
How to Make Beef Tips and Gravy in the Crockpot:
- Whisk gravy ingredients and soup together in a bowl. NOTE: It’s okay if it’s a little lumpy, it will smooth out as it cooks.
- Place beef tips in the bottom of a crockpot and pour gravy over the top.
- Cover and cook on LOW for 7 hours or HIGH for 3 hours. Remove the beef with a slotted spoon.
- Make a slurry with 1 tablespoon of cornstarch and 1 tablespoon of cold water in a jar and shake until smooth. Slowly add slurry to the gravy to thicken as desired. NOTE: Thicken the gravy only if necessary.
What Goes With Beef Tips and Gravy?
Serve beef tips with gravy over buttered noodles, mashed potatoes, or baked potatoes, or rice. A side of brown sugar carrots, a simple tossed salad, and an old-fashioned peach cobbler will round out this cozy meal!

Easy Beef Tips and Gravy
Equipment
Ingredients
- 2 pounds beef tips or stewing beef
- 1 Tablespoon olive oil
- 3 cups beef broth
- ⅓ cup red wine optional
- 2 ounces brown gravy mix 2 packets (a little more or less, or even 1 packet will work)
- 1 ounce au jus gravy mix 1 packet
- 1 ounce onion soup mix 1 packet
- 21-26 ounces condensed cream of mushroom soup 2 small cans or 1 large can
- chopped fresh parsley optional garnish
Instructions
- Cut beef into 1 inch cubes.
- To a large dutch oven or pot on medium high heat, add olive oil. Once shimmering, add about half of the beef. Brown beef, and remove from the pot. Brown remaining beef. Return all beef to the dutch oven.
- Meanwhile, in a small bowl, mix together beef broth, red wine if using, and packets of gravy, au jus, and onion soup.
- Add broth mixture and cream of mushroom to the dutch oven and stir to combine. It may be a little lumpy but will mix as it cooks.
- Bring to a boil. Once boiling, reduce heat to a simmer. Cook for 1 ½ -2 hours, stirring occasionally, until beef is tender.
- Serve over egg noodles, rice, or mashed potatoes. Garnish with parsley if desired.
Notes
- Refrigerate leftovers in a covered container for up to 3 days.
- Reheat on the stovetop or in the microwave, adding a bit of water to loosen the gravy.
