Mayonnaise: Opt for full fat mayo made with olive oil for the best flavor. Light mayonnaise can also be used if cutting calories is important.

Ingredients  

  • 1 cup mayonnaise
  • ¼ cup Greek yogurt
  • ¼ cup parmesan cheese shredded
  • ½ lemon juiced
  • 2 anchovies
  • 1 Tablespoon oil from the anchovies
  • 2 cloves garlic minced
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon kosher salt or to taste
  • ¼ teaspoon freshly ground black pepper or to taste

Instructions 

  • In a food processor, add all ingredients. Process until smooth and creamy.
  • Serve with romaine lettuce. Garnish with croutons and shredded parmesan cheese if desired.

Notes

  • Store leftovers in a covered container in the refrigerator for up to 3 days. Fresh garlic used in recipes and not cooked first, should not be stored any longer than 3 days, as it can produce botulism.
