In a food processor, add all ingredients. Process until smooth and creamy.
Serve with romaine lettuce. Garnish with croutons and shredded parmesan cheese if desired.
Notes
Store leftovers in a covered container in the refrigerator for up to 3 days. Fresh garlic used in recipes and not cooked first, should not be stored any longer than 3 days, as it can produce botulism.
