Ingredients and Variations

  • Kale: Look for full and fresh bunches of raw kale with dark green leaves. Remove the leaves from the tough ribs, and tear them into bite-sized pieces, and for the best results, use a salad spinner to remove excess moisture once they’ve been rinsed. The drier the kale, the better the oil and seasonings can cling to the leaves.
  • Seasonings: Swap out olive oil for a flavored oil like chile, basil, or rosemary for a new flavor profile. Melted bacon grease is a quick and easy upgrade for a smoky flavor. Kosher salt is preferable due to its larger grain size, and it doesn’t contain any anti-caking agents or additives.
  • Variations: Zest ‘em up by adding some chili seasoning or a kid-friendly everything bagel blend. Make cheesy kale chips by sprinkling on some Parmesan cheese or nutritional yeast (AKA nooch) halfway through baking.

How to Make Kale Chips

  1. Prepare a baking tray(s) with parchment paper.
  2. Place torn kale pieces on the baking tray and sprinkle with olive oil and salt.

Baked Kale Chips

Ingredients  

  • 1 bunch kale stems and ribs removed
  • 1 Tablespoon olive oil or to taste
  • 1 teaspoon kosher salt or cracked salt (or seasoned salt), to taste

Instructions 

  • Preheat oven 350°F. Line baking tray(s)* with parchment paper.
  • Remove kale leaves from ribs and tear into bite-sized pieces. Wash carefully and dry well using a salad spinner.
  • Lay kale on baking tray and sprinkle with olive oil*. Toss to coat and spread evenly on baking tray. Sprinkle with kosher salt.
  • Bake for 10 – 15 minutes, until edges are very slightly browned.

Notes

  • May reuse the same baking tray, or use two trays.
  • *Or add kale to a large bowl, sprinkle with oil, and toss to coat.
  • Store leftovers in an airtight container for up to 3 days. Refresh in the air fryer or under the broiler for 1 minute.
