A Pizookie is a large cookie baked most often in a small cast iron skillet. Made famous by BJ’s restaurant chain, it has crisp edges, a gooey center, and is often served warm from the oven.

Favorite Pizookie Variations

  • For a chewier Pizookie, reduce the flour by 2 tablespoons.
  • You can use a larger skillet or pan for a thinner cookie, just be sure to adjust bake time.
  • If you are short on time, use ready made cookie dough. Try cookie flavors like peanut butter, sugar, or cookies and cream.
  • Swap chocolate chips for white chocolate, peanut butter, or butterscotch chips. Use chopped candy, mini chocolate chips, M&M’s. Chopped Kit Kat bars or peanut butter cups would be tasty options.
  • Add chopped walnuts, pecans, or granola for a crunchy texture.

How to Make a Pizookie

  3. Spread dough in an 8” oven-safe skillet, cake pan, or cast-iron pan and bake until the center is set.

Tool Tip!

  • I like a cast iron skillet because it distributes heat evenly, but any skillet can work.

Tips For Success

  • For an extra gooey center, underbake the cookie slightly. The residual heat of the pan will continue to cook the cookie.
  • Do not overmix the dough after adding the flour or the cookie may turn tough.
  • Let Pizookie cool 5 minutes before serving so it remains gooey yet firm.
  • Add vanilla ice cream right before serving so that it melts into the warm cookie instead of melting too fast.

Storing Leftovers

  • Discard any cookie that was covered in ice cream or whipped cream.
  • Store leftovers in an airtight container or a Stasher Bag at room temperature for up to 3 days, or refrigerate for up to 4 days. 
  • Freeze cooled Pizookie for up to 2 months. Pop one into a backpack or briefcase for a perfectly thawed treat by lunchtime.
  • Enjoy at room temperature, or reheat for a few seconds in the microwave to bring back the soft center. If reheating from frozen, thaw overnight in the fridge first for the best texture.

Instructions 

  • Preheat oven to 350°F. Grease an 8” skillet.
  • In a medium bowl, combine butter and sugars. Add egg until well mixed.
  • Add flour, vanilla, and baking soda and mix until well combined.
  • Mix in chocolate chips.
  • Spread cookie dough evenly in a skillet, and top with extra chocolate chips if desired.
  • Bake 20 to 22 minutes, or until the center is just set. Cool for 5 minutes and serve. Top with ice cream if desired.

Notes

  • *For a chewier pizookie, reduce the flour by 2 Tablespoons
  • If using a 6” skillet, increase bake time by about 3 to 4 minutes.
  • Store leftovers in a zip bag or airtight container at room temperature for 3 days, or in the refrigerator for up to 4 days.
  • Pizookies will store in the freezer for up to 2 months.
