Ingredients
Strawberries: Pick strawberries that are bright red and fully ripe for the best flavor. Avoid white or green tips because they are not ripe, and will not be as sweet. Berries that are firm are best. If they are too soft, they are likely over ripe and on the verge of spoiling.
Glaze: Jell-O powder gives the glaze it’s luscious, glossy finish while the cornstarch and sugar helps the filling hold together well.
Pie Crust: Use any store bought pie crust. I like Pillsbury pre-made refrigerated pie crusts that I can make in my own pie plate for that homemade look.
Garnish: Whipped cream from scratch or from a can is perfect for garnish. Whipped topping is also delicious and will stand up under the summer heat a bit better. Reserve some strawberry slices with the leaves on for a pop of red and green color.
Variations
Experiment with different types of crusts. Make your own homemade pie crust, use a graham crust, or even a chocolate graham crust. There are gluten free options available if this is right for you or your guests.
The original recipe calls for 3 cups of berries, but I love using more! So I have modified the recipe to include 4 cups of sliced berries. Experiment with the amount you like.
Add in other berries such as blueberries, raspberries, sliced peaches or even some cooked rhubarb. Experiment with other Jell-o flavors, such as raspberry, for a unique and tasty dessert. Try adding a splash of rhubarb liqueur in place of some of the water.
There are so many ways to garnish this pie. Use store bought whipped topping or vanilla ice cream. Mint leaves make a lovely and decorative garnish, as do edible flowers like pansies, violets, or marigolds. Even small sprigs of thyme or basil pack a surprising and aromatic touch.
How To Make Fresh Strawberry Pie
- Prepare pie crust.
- Wash, pat dry and slice strawberries.
- Combine Jell-o, cornstarch, sugar and water. Cook according to recipe below.
- Toss together with strawberries, fold into pie crust and refrigerate.
Tips For Success
- Make sure the pie crust is fully baked and cooled before adding the filling. This will prevent it from becoming soggy.
- Use strawberries that are ripe for the best flavor and chop them to evenly sized pieces.
- Be sure to stir the glaze continuously while cooking. This will help avoid lumps and make sure it thickens properly.
- Once glaze is brought to a boil, lower the heat to continue to cook. It will becomes thick and should no longer be opaque. You want a clear and glossy glaze.
- Allow strawberry pie to chill for at least 2 hours, or overnight if possible, to make sure the filling is firm. Slice with a sharp knife.
Best Storage Ideas
Cover fresh strawberry pie with plastic wrap or foil and refrigerate for up to 3 days. This will help to retain its freshness.
You can freeze the pie, or individual slices, if needed. Wrap each piece, or entire pie, with plastic wrap followed by foil before placing in the freezer. Thaw in the refrigerator.

Fresh Strawberry Pie

Ingredients
- 1 baked pie shell homemade or store bought
- 4 cups diced strawberries
- 1 cup water
- 1 strawberry flavored gelatin powder 3 ounce size
- ⅓ cup granulated sugar
- 2 Tablespoons cornstarch
Instructions
- Prepare pie crust according to package directions. Cool.
- Clean and dice strawberries.
- In a medium pot, combine water, strawberry Jell-O powder, cornstarch and sugar. Stir until cornstarch is dissolved.
- Bring Jello-O mixture to a boil over medium heat. Stir constantly and cook until thick and no longer opaque (about 5-10 minutes).
- Remove from heat and add strawberries. Stir until strawberries are completely covered with strawberry Jello-O sauce.
- Fold into prepared pie crust and spread to the edges as evenly as possible.
- Refrigerate until set (about 2 hours or overnight).
- Slice and serve with whipped cream or whipped topping.
