Ingredients and Variations

White Sugar: Use regular white sugar, (or granulated sugar). Caster sugar is more finely ground than white and can also be used. Larger-grained raw sugar (AKA sugar-in-the-raw), Turbinado, and Demerara sugars can be made into brown sugar, but are best used as ingredients for streusel or as a topping.

Molasses: Mild or dark molasses (or treacle) is used in this recipe. Blackstrap molasses can be used but has a more robust flavor and is best used as a sauce or glaze.

Variations

Grape and date molasses will add a bright, fruity flavor to homemade brown sugar, and carob molasses will impart a chocolatey flavor.

It’s not recommended to use maple syrup or honey because neither has the strong flavor that molasses does.

Stir in a little cinnamon or homemade apple pie spice, or gingerbread spice.
