Ingredients And Variations
FRUIT: Strawberries are a popular fruit that has a jewel-toned hue but if you want different fruits that are colorful and tasty, try blackberries, blueberries, rhubarb, or even fresh cherries while they are in season! Frozen fruits or berries need to be thawed in a colander in the sink before using. The excess liquid from the fruit will drain out.
SUGAR: Plain white sugar is recommended but superfine white sugar will dissolve more quickly. Sugar free sweeteners like granulated Splenda can also be used.
PECTIN: Because pectin is a gelling agent found in fruit, it is naturally gluten-free. Look for specific freezer jam pectin in powder or liquid form. Certa, or Ball both make freezer jam pectin that’s ready to use, and low or no sugar blends typically set a gel better, too.
How To Make Strawberry Freezer Jam
Everyone can make strawberry jam without heating up the kitchen! Just follow these easy steps.
- Hull the strawberries (which means to remove the leafy cap as well as the tough inner core of the strawberry)
- Mash strawberries to make 4 cups (as per recipe below).
- Stir in sugar and pectin and stir for 3 minutes.
- Pour into jars leaving a ½” space at the top. Wipe rims and cover with lids.
For best results, chill a minimum of 2 hours before using.
How To Store?
Jam can be stored in mason jars, or other tight fitting plastic containers. Freeze for up to 1 year or refrigerate for 3 weeks.

Strawberry Freezer Jam Recipe

Ingredients
- 4 cups mashed strawberries just over 4 pounds (about 4 ¼ pounds before hulling
- 1 ½ cups sugar *
- 5 Tablespoons freezer jam pectin (1 pouch)
Instructions
- Wash and hull* strawberries. Mash strawberries using a potato masher or meat chopper to reach 4 cups.
- In a large bowl, add berries, sugar, and pectin, stirring for 3 minutes.
- Add jam to jars, leaving ½ inch at the top. Wipe jar rims and cover with lids.
- Allow to rest for 30 minutes to thicken before serving or storing.
Notes
- *To 'hull' a strawberry means to remove the leafy cap as well as the tough inner core of the strawberry. Do this carefully, using a pairing knife.
- Makes just over 5 cups.
- Freeze for up to 1 year, or refrigerate for 3 weeks. (Strawberry freezer jam is not shelf stable, and requires cold storage.)
