Ingredients and Variations

Lilac Blossoms: If foraging for lilac blossoms, be sure you’re in an area free of pesticide zones. A small basket or shoe box is great for collecting instead of plastic bags that will make the blooms sweat or become crushed. Of course you can always purchase them ready to use! Look for blossoms with a lavender (lilac) color, but they also come in pink, white, and even a darker purple.

Sugar: White table sugar is suggested in this recipe, but depending on how you want to use it, you can use coarse or turbinado (brown) sugar for baking and decorating. Superfine sugar is best as a dip for the rims of glasses, lip balm, and sugar scrubs.

Variations

Add a small section (about 1”) of cut vanilla bean for vanilla lilac sugar or a small sprig of mint to make lilac mint sugar.

How to Make Lilac Sugar

  1. Remove lilac blossoms from stems. Rinse and spread on a clean paper towel to dry thoroughly.
  2. Stir blossoms with sugar into a bowl. (Recipe below.)
  3. Stir or shake the lilac sugar daily for 7 days and store it in a jar.

Helpful Hints

  • No need to wash a second bowl. Simply prepare lilac sugar directly into the jar you’ll be using for storage.
  • If finished sugar remains slightly damp, spread it onto a baking sheet and bake at 200°F for 5-10 minutes.

Ways to Use Lilac Sugar

Sprinkle some lilac sugar over homemade Dutch baby pancakes, or add a scoop or two to a pitcher of creamy lemonade or iced tea or coffee. Press the rims of glasses into lilac sugar and use for cranberry mimosas or rhubarb liqueur. Don’t forget to save a sprig of lilac flowers for garnish!

How to Store Lilac Sugar

Keep lilac sugar in a jar with a tight-fitting lid in a cool cupboard. If clumps appear during storage, simply give the jar a good shake before using.

Equipment

Ingredients

  • 1 cup lilac blossoms tightly packed
  • 1 cup sugar granulated

Instructions

  • Cut or pull blossoms from the stem. Rinse and dry well, removing any leaves, stems, or brown flowers.
  • Add blossoms and sugar to a bowl*. Stir to combine. Add the sugar mixture to a jar, put the lid on, and shake the jar to distribute the flowers.
  • Shake the jar at least once daily for 7 days.
  • Sift to remove the dried blossoms**. Store in a jar. If the sugar is slightly damp, dry if desired by baking on a parchment-lined tray for 5-10 minutes at 200°F. Cool, break up any lumps, and store.

Notes

*Alternatively, to save a dirty bowl, add about ⅛ cup sugar to a 2 cup jar. Add ⅛ cup lilacs. Alternate sugar and lilacs until both are used or the jar is filled. Put the lid on and shake the jar to distribute the flowers. Continue with the recipe as written.
**Lilac sugar, with the blossoms, can be blended in a food processor. This will make a lovely, stronger flavored sugar.
