Lilac blossoms are gently simmered in homemade simple syrup and then strained.

Ingredients in Lilac Simple Syrup
Lilac Blossoms: Find blossoms (florets) locally that are untreated or buy them online. Remove the stems and leaves otherwise the syrup will be bitter.
Simple Syrup: Superfine sugar will dissolve more quickly in the hot water, but any grade of white sugar will do.
Variations: Add a pale shade of red or blue or purple to lilac syrup by adding a strawberry, blueberry, or raspberry to the recipe in Step 2. A small vanilla bean or cinnamon stick can be added to the syrup in Step 2 for even more flavor.


How to Make Lilac Syrup
Lovely lavender lilac simple syrup is a sweet upgrade to tea, cocktails, and lemonade!
- Prepare lilac flowers by removing the blossoms, rinsing, and drying them well by spreading them out on a clean paper towel.
- Bring water, sugar, and blossoms (and optional berry for color) to a boil or until the sugar is fully dissolved. (See recipe below.)
- Remove the berry and store the syrup in the refrigerator to steep up to 3 days.
- Strain syrup in cheese cloth before storing.

Ways to Use Lilac Syrup
Homemade lemonade and lilac syrup are a match made in summer heaven with a sprig of mint as a garnish! Make a lilac martini and use a berry instead of an olive as a garnish or make a simple sparkling water mocktail with a slice of lemon and a lilac flower garnish. Brush lilac simple syrup on a cake before frosting, or use to sweeten and add depth to fruit salad or yogurt. Add to cocktails, iced tea, sparkling wine or water.

Storing Lilac Syrup
Keep lilac syrup in a covered container in the refrigerator for up to 3 weeks or freeze into ice cubes for iced tea, lemonade, or cocktails!

Ingredients
- 1 cup lilac blossoms tightly packed
- 1 cup water
- 1 cup sugar granulated or lilac sugar
- 1 blueberry blackberry, strawberry, or raspberry, optional, for color
Instructions
- Cut or pull blossoms from the stem. Rinse and dry well, removing any leaves, stems, or brown flowers.
- Add water to a small saucepan on medium high heat. Add sugar, lilac blossoms, and berry if using.
- Bring to a boil and boil for 2-3 minutes, or until sugar is dissolved. Cool.
- Remove berry if using and refrigerate overnight, or up to 3 days, until the flavor is to your liking. Strain, using cheesecloth, to remove blossoms. Store in an airtight container in the refrigerator for 2-3 weeks.
