Simple Kitchen Staples
Flour: All-purpose white flour yields the best fluffy, tender results. For accurate measuring, aerate the flour by whisking it in the container before scooping it out.
Baking Powder: Without active baking powder, biscuits will not rise, so check that it’s not expired.
Butter: Butter provides rich flavor. We prefer unsalted, but any real butter works.
Sugar & Salt: These give extra flavor, but biscuits are tasty without sugar or even salt, if using salted butter.
Milk: This is your binder. Whole milk gives a rich flavor to biscuits, but you can use buttermilk, half-and-half, cream, or your favorite non-dairy alternative.
Variations: Match your biscuits to the menu and sprinkle in some seasoning blends like Italian herbs, everything bagel, or a simple sprinkle of parmesan cheese to add extra flavor. Got buttermilk? Swap it for milk! You could even make your own dog biscuits (without salt or sugar!) by swapping in whole wheat for all-purpose flour and adding an egg or two for protein.

Pro Tips for the Best Biscuits
- You may not need all of the flour listed in the recipe. Use only what is needed to produce the right consistency that is pliable and easy to form.
- Avoid overworking the dough, which can produce flat and dense biscuits.
- For extra fluffy biscuits, make your own buttermilk by stirring in a tablespoon of white vinegar in the milk and let it stand for 5-10 minutes
- No matter if you are using a glass or a biscuit cutter, don’t twist it when cutting the biscuits. Twisting the cutter seals the dough and prevents it from rising into airy layers.
- Brush biscuit tops with milk or an egg wash if desired to produce shiny and golden-brown tops.
