Country Gravy vs Sausage Gravy
Usually, country gravy is a meatless white sauce, but we like it best with sausage. Country gravy has a roux made with butter, while sausage gravy uses the rendered fat from the sausage. We like adopting the best of both worlds in our recipe for delicious country gravy with sausage!

Ingredients and Variations
Sausage: Pork breakfast sausage is juicy and flavorful, but you can use turkey sausage or any pork sausage removed from the casings.
Butter: Use butter or bacon grease as the fat in this recipe, along with or instead of the sausage drippings.
Flour: Flour is necessary to create the roux which is the base for country gravy. Be sure it’s properly measured; whisk the flour in its container before measuring to aerate the flour before adding to the measuring cup.
Variations: Mix up the flavors and add a seasoning blend that matches the menu! Try a zesty Cajun blend or whisk in some red pepper flakes, hot sauce, or dried herbs like rosemary or sage. Browning the roux by cooking it longer will impart a richer roasted flavor, if you don’t mind a darker gravy.




How to Make Country Gravy
- Cook sausage and remove with a slotted spoon, reserving drippings in the pan.
- Stir butter and flour into the pan and cook.
- Slowly add milk and stir until gravy reaches desired consistency.
- Return sausage to pan, season, and serve gravy over biscuits.

Storing and Reheating

Ingredients
- 16 ounces breakfast sausage
- 4 Tablespoons unsalted butter
- sausage drippings
- 1 cup flour
- ¼ – ½ cup milk*
- salt to taste
- freshly ground black pepper to taste
Instructions
- In a large skillet over medium-high heat, brown sausage. Once browned, remove the sausage from the skillet and set aside. Do not drain.
- Into the same skillet with the sausage drippings, on medium heat, add 4 Tablespoons unsalted butter.
- Once the butter is melted, add 1 cup flour. Stir with a wooden spoon; it will be very thick.
- Once it looks like a thick paste, slowly add in the milk, stirring frequently to mix it all together. Continue to add milk until the gravy reaches the desired consistency.
- Add reserved sausage and stir to combine. Taste, and season with salt and pepper to taste.
Notes
- More than ½ cup of milk might be required to achieve your desired thickness.
- Delish served with homemade biscuits
- Store leftovers in the refrigerator for up to 4 days. Do not freeze.
