Ingredients in Fruit Salad

Fruit: Use this recipe as a guideline, but any fruit works! Mandarin sections, chunks of cantaloupe, and honeydew or watermelon are all great options in a fruit salad. Fresh plums, nectarines, and peaches can be sliced thinly for fruit salad as well.

Dressing: This fruit salad has a very simple vanilla lime dressing with an optional touch of honey as a sweetener. Orange or pineapple juice can be used instead of lime juice. A little yogurt added will add some creaminess as well as help the fruit from oxidizing.

Variations

Missing any of the fruit listed in the recipe? No problem. Simply leave it out, or adjust the ratio of the fruit you do have, to suit the recipe.

You can adjust the amount of lime zest and honey to your liking. Orange juice and zest can be swapped in place of lime juice and zest if you prefer.

Garnish fruit salad with toasted coconut, sliced almonds, pistachios, or granola for a little crunch.

Did you know…

While grapefruit is delicious added to this fruit salad, I have chosen to omit it from the recipe. Grapefruit can interfere with certain medications that some people need to take, so it’s best to just leave it out, especially if serving for a group.

How to Make Fruit Salad

  1. Wash and prep fruit as per recipe directions below.
  2. Combine all fruit except blackberries, raspberries, ½ of the lime zest, and mint leaves in a large bowl.
  3. Toss the fruit with ½ of the lime zest and vanilla. Add honey to taste if desired.
  4. Sprinkle the top of the fruit salad with remaining berries, lime zest, and mint leaves.
  5. Refrigerate until ready to serve and garnish with sliced bananas.

Keeping Fruit Salad Fresh

  • Toss banana slices, apples, pears, and stone fruits in a small amount of lemon or lime juice to prevent them from browning.
  • Prep fruit salad up to a day in advance and store the bananas and dressing separately until ready to toss and serve within 24 hours.
  • Keep leftover fruit salad in a covered container in the refrigerator for up to two days. Drain salad in a colander and enjoy leftovers as is or use as a topping on overnight oats, a yogurt bowl, or with French toast.

Give this colorful, delicious and easy fruit salad a try!

Ingredients  

  • 2 oranges sectioned
  • 1 cup strawberries about ½ pint
  • 1 cup blueberries
  • 1 cup grapes halved or quartered
  • 2 kiwis diced
  • 1 mango diced
  • 1 apple diced
  • 1 pear diced
  • ½-1 lime zested and juiced (about 2 Tablespoons), divided
  • 1 teaspoon vanilla
  • 1 Tablespoon honey optional, to sweeten
  • 1 cup blackberries
  • 1 cup raspberries
  • 10 mint leaves optional
  • 2 bananas sliced, optional for serving

Instructions 

  • Wash and dry fruit before slicing. Prepare all fruit (peel, section, dice, etc) except for bananas.
  • To a large bowl, add oranges, strawberries, blueberries, grapes, kiwi, mango, apple, and pear. Sprinkle with lime juice, half of the lime zest, and vanilla. Toss gently to combine.
  • Taste. If you prefer it sweeter, drizzle with honey, about 1 teaspoon at a time, and toss. Repeat until the salad reaches desired sweetness.
  • Sprinkle top with blackberries, raspberries, remaining lime zest, and mint leaves.
  • Refrigerate until serving. Serve with sliced bananas if desired.
