So Many Ways to Cook Baby Potatoes

Potatoes are so versatile. No other veggie has so many different cooking methods! Potatoes can be roasted, oven-baked, boiled, grilled, and even prepared in a Crockpot or an Instant Pot! For this baby potatoes recipe, we serve them simply buttered and tossed with some fresh dill and a sprinkle of black pepper. Yum!

What are New Potatoes?

There is nothing better than fresh garden potatoes! I saw these “babies” at the market and had to get them. You can buy baby potatoes all year round, and they are great, but when you can snag the new potatoes, don’t hesitate! Don’t get confused by new potatoes recipes, they are essentially the same as baby potatoes.

  • Because they are “new” they are slightly more tender and don’t need to be peeled before cooking.
  • They hold their shape better than older potatoes and have a tendency to be sweeter and not as starchy, so they are perfect served alone or in salads.
  • They can also come in red, yellow, purple, or the standard light brown potato color, which makes them great for a colorful side dish!

Every home cook needs a few trusty new potatoes recipes in their arsenal for a hearty, last-minute side dish.

Ingredients/Variations

New potatoes go with everything! Serve these up with Instant Pot Ribs, and Red Leaf Salad with Lemon Vinaigrette for a simple, tasty meal. Or for more adventure, try Smoked Baby Back Ribs or this Beef Brisket Slow Cooker recipe!

  • This recipe uses 4 simple ingredients; baby potatoes, fresh dill, butter, and pepper!
  • For a pop of color, mix in some cooked green beans and bacon bits with steamed potatoes for a side dish that’s a real crowd-pleaser served hot or cold!
  • Try some garlic dill new potatoes by adding some minced garlic along with the melted butter and black pepper!
  • In lieu of sour cream, drizzle them with the complementary Creamy Dill Dressing. My kids cannot get enough of these potatoes with dill dip!

How to Cook Baby Potatoes

Cooking potatoes has never been easier! No peeling and no special preparation!

  1. Bring water to a boil in a deep pot on the stove.
  2. Place the potatoes in a steaming basket and lower them into the boiling water.
  3. Cover the pot and steam until the potatoes are just barely fork tender.

How to Steam Potatoes in the Microwave

This is an easy way to steam potatoes on the stovetop, but there is also an easy microwave method as well!

  1. Place potatoes in a large glass bowl in about three inches of water.
  2. Seal bowl with plastic wrap and microwave in 5-minute intervals checking for doneness.
  3. Peel off plastic away from your face to avoid the steam.

Leftovers

Potatoes hold up really well as leftovers and can be easily reheated, reseasoned, and served again!

  • For a new twist on leftover baby potatoes, mash them with some creamer and form them into rounds and fry them (or freeze them!) for potato pancakes! To freeze potato pancakes, layer them between sheets of parchment paper and wrap them in plastic wrap then place them in a labeled zippered bag.
  • Use them to make crispy smashed potatoes. Sprinkle with parmesan cheese after you flip them for an extra special treat!
  • Dice and fry in butter for a side of hashbrowns to go with baked beans, eggs, and bacon. Breakfast for dinner?
  • Or simply reheat them in the microwave and then add a little extra butter and pepper (or some salt!) and serve them up again!

Leftover potatoes are easy to freeze, too! Once they are chilled, place them in a zippered bag with the date labeled on the outside and keep them in the freezer for up to 8 weeks.

Baby Potatoes Recipe

This Baby Potatoes Recipe is the ultimate side dish. The whole family will love these creamy, tender potatoes!
Prep Time 5 minutes
Cook Time 18 minutes
Total Time 23 minutes

Ingredients  

  • 1-1 ½ pounds baby potatoes
  • 2 Tablespoons butter
  • 2 Tablespoons fresh dill or 2 teaspoons dill (dried)
  • freshly ground black pepper

Instructions 

  • Add 2 cups water to the bottom of a pot.
  • Wash potatoes and cut in similar sized pieces, approximately ¾ inch. Add to a steaming basket, place on top of pot (or in pot) and cover pot.
  • On medium-high heat, steam potatoes for 18-20 minutes. Check after 18 minutes, if fork tender, remove from heat.
  • Add cooked potatoes to a bowl, add butter, dill, and pepper, and toss gently to coat with butter and herbs. Garnish with more dill and serve!

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. 
Reheat in the microwave and refresh flavors by adding a little extra butter, fresh dill, salt & pepper!
