Ingredients and Variations
Lilac Blossoms: If foraging for lilac blossoms, be sure you’re in an area free of pesticide zones. A small basket or shoe box is great for collecting instead of plastic bags that will make the blooms sweat or become crushed. Of course you can always purchase them ready to use! Look for blossoms with a lavender (lilac) color, but they also come in pink, white, and even a darker purple.
Sugar: White table sugar is suggested in this recipe, but depending on how you want to use it, you can use coarse or turbinado (brown) sugar for baking and decorating. Superfine sugar is best as a dip for the rims of glasses, lip balm, and sugar scrubs.
Variations
Add a small section (about 1”) of cut vanilla bean for vanilla lilac sugar or a small sprig of mint to make lilac mint sugar.
How to Make Lilac Sugar
- Remove lilac blossoms from stems. Rinse and spread on a clean paper towel to dry thoroughly.
- Stir blossoms with sugar into a bowl. (Recipe below.)
- Stir or shake the lilac sugar daily for 7 days and store it in a jar.
Ways to Use Lilac Sugar
Sprinkle some lilac sugar over homemade Dutch baby pancakes, or add a scoop or two to a pitcher of creamy lemonade or iced tea or coffee. Press the rims of glasses into lilac sugar and use for cranberry mimosas or rhubarb liqueur. Don’t forget to save a sprig of lilac flowers for garnish!
How to Store Lilac Sugar
Keep lilac sugar in a jar with a tight-fitting lid in a cool cupboard. If clumps appear during storage, simply give the jar a good shake before using.
