The Easiest Green Beans You’ll Make

  • Flavor: Savory with a hint of garlic, perfectly roasted to bring out toasty flavors and a subtle peppery kick.
  • Why Make It: This beginner friendly, hands-off side cooks while you finish the main, with very little cleanup thanks to parchment.
  • Tools needed: All you need is a rimmed baking sheet, parchment paper, and a mixing bowl. Or save dishes and simply toss everything directly on the sheet.
  • Serving Suggestions: I love serving these as my default veggie! While the main is sizzling on the stove, I pop these in the oven and know they’ll be perfectly roasted and ready. They pair perfectly with chicken and pork.

Simple Ingredients, Big Flavor

  • Green Beans: When prepping, I look for bright, firm beans that snap.
  • Olive Oil: Use just enough to coat the beans so the seasonings stick and the beans roast evenly. Too much oil can make them limp instead of crisp-tender.
  • Salt and Pepper: Season with a light amount of kosher salt, then adjust to taste after roasting. Add black pepper before or after cooking for depth or bite.
  • Garlic: You can use finely crushed garlic, but be careful as it can burn easily. Garlic powder is easier to control flavor without fear of burning.
  • Variations: Finish with a touch of lemon, a sprinkle of Parmesan, or a drizzle of balsamic glaze for extra flavor. Add crunch with toasted almonds or a kick with red pepper flakes or Cajun seasoning.

How to Roast Green Beans in the Oven

  1. Clean and prep green beans.
  2. Toss the beans in oil and seasonings, then roast (full recipe below).

Pro Tips for Perfectly Roasted Beans

  • Be sure to dry beans thoroughly, or you can wash and trim beans early in the day then let them air dry. Dry beans will brown beautifully in the oven.
  • Coat bean with just enough oil so the seasonings stick and beans roast evenly. Too much can make them limp.
  • For crispier beans, space them out so they crisp on all sides. You can also broil for 30 to 60 seconds at the end of cooking.
  • If the beans taste flat, you can finish with a pop of lemon juice or a tiny balsamic drizzle.

Storing and Reheating Leftovers

Refrigerate leftovers in an airtight container for up to 4 days and in the freezer for up to 3 months. Reheat in the oven or toaster oven at 400°F for 5 to 8 minutes, or in an air fryer at 350°F to 375°F for 3 to 5 minutes to regain some crispness. Leftovers can also be used in soups, casseroles, fried rice, or meal prep bowls.
