How to Make Tortellini Soup

  1. Brown meat (if using fresh) in a large pot.

Storing Leftover Soup

Tortellini Soup Recipe

Try this slightly spicy, one pot beef tortellini soup when you need a quick weeknight dinner.

Ingredients  

  • ½ -1 cup leftover roast meat or sausage, chopped
  • 28 ounces diced tomatoes 1 can
  • 4 cups beef broth
  • 1 cup water
  • 1 red pepper chopped
  • 1 Tablespoon Italian dressing mix or Trader Joe’s Everyday Seasoning or Italian Seasoning
  • 1 teaspoon dried garlic slices or ½ teaspoon garlic powder
  • 2 teaspoons dried onion flakes
  • 1 pound fresh tortellini fresh
  • freshly ground black pepper to taste

Instructions 

  • If using sausage, brown sausage in the bottom of a dutch oven or large pot.
  • Add diced tomatoes, beef broth, water, red pepper, Italian dressing mix, garlic and onion flakes. Bring to a boil. Reduce heat and simmer for 5 minutes. Add leftover roast beef if using.
  • Bring to a boil, add tortellini and cook for 7 minutes (or per package directions). Sprinkle with pepper and serve.

Notes

  • Keep leftover soup in an airtight container in the refrigerator for 4 days and in the freezer for 1 month.
