  • Apple Filling:
    • I love using Granny Smith apples for this recipe because of their sweet-tart flavor and firm texture when cooked. Honeycrisp and Fujis are a sweeter option, but also stay firm when baked.
    • A little granulated sugar sweetens the apples without overpowering their natural flavor.
    • As the apples bake, they release their juices. A little flour thickens these juices into a sweet, syrupy filling.
  • Topping:
    • Quick oats blend easily into the topping and create a fine, crumbly texture. Avoid using instant flavored oatmeal.
    • Brown sugar adds a sweet, rich, caramel-like flavor to the topping. Use light or dark brown sugar.
    • Butter adds richness and helps create a golden, crumbly topping when evenly mixed with the other ingredients.
    • Store-bought or homemade apple pie spice is an easy shortcut that adds a blend of warm, fall-inspired spices. Cinnamon makes a good substitute.
    • Chopped pecans, while optional, add a toasty crunch to this recipe. Almonds, haselnuts, or walnuts are also good choices.

How to Make Apple Crisp

  1. Mix apples with flour and sugar
  2. Add them into a prepared casserole dish.
  3. Combine the topping and spread over apples. Bake (full recipe below.)

Tips for the Best Crisp

  • Thinly slice the apples for a soft, tender texture, or slice them thicker for apples that hold their shape with a little bite. Either way, keep the slices uniform so they bake evenly.
  • Use a mixture of tart and sweet apples for an interesting, yet delicious flavor.
  • If the topping starts to brown before the apples are tender, loosely tent some aluminum foil over top to prevent it from burning.
  • A golden topping doesn’t always mean the apples are fully cooked. Insert a thin knife or fork into the center to make sure the apples are tender.

Store, Freeze, and Reheat

  • Store: Refrigerate cooked and cooled apple crisp in a covered container for up to 3 days. Freeze portions in small containers for up to 3 weeks. The topping will soften as it sits.
  • Reheat: Thaw apple crisp that has been frozen in the refrigerator before reheating. Microwave individual portions, or reheat uncovered in a 350˚F for about 15 to 20 minutes or until warmed and the topping is crisp again.
  • Freeze for Later: Assemble the apple crisp (without baking) in a freezer-friendly baking dish. Wrap tightly and freeze for up to 3 months. Bake straight from frozen at 350°F, but add 10 to 15 minutes to the baking time.

Ingredients

Fruit Mixture

  • 5 cups sliced apples
  • 2 Tablespoons sugar
  • 1 Tablespoon all purpose flour

Topping

Instructions

  • Preheat oven to 375°F. Grease a 6 or 8 cup baking dish and set aside.
  • Peel apples, and cut into slices. Add to greased baking dish.
  • Sprinkle with sugar and flour, tossing to coat. Set aside.
  • In a medium bowl, make the topping. Add oats, brown sugar, butter, flour, and apple pie spice and mix with a pastry cutter or fork. Once fully mixed, stir in nuts if using. Spoon topping on top of fruit, pressing down lightly.
  • Bake 30 to 35 minutes, or until bubbling on the edges and apples are cooked through to your liking. If the top starts to brown but the fruit is not ready, loosely tent with foil or parchment and bake for 5 more minutes. If still not ready, check after 3 minutes until it is cooked to your liking.
  • Allow to rest for 5 minutes to thicken the fruit mixture before serving. Serve with whipped cream or ice cream if desired.

Notes

  • Cover leftovers and refrigerate for up to 3 days, or freeze for up to 3 weeks.
  • To make a day ahead, assemble the apple and crisp mixtures in separate bowls. Refrigerate up to 24 hours before assembly and baking.
  • To make ahead and freeze, assemble the apple crisp in a baking dish, wrap in foil, then plastic, and freeze for up to 3 months. Bake at 350°F  and add 10 to 15 minutes to the baking time.
