Ingredients and Variations

TOMATOES: While any tomato will do, Romas are preferred since they are meatier. But even little cherry tomatoes can be used by simply decreasing the bake time or placing them under the broiler so they’re ready even faster.

SAUCE: More like a condiment, Worcestershire sauce infuses savory flavor into each tomato. Soy sauce, balsamic vinegar, or liquid aminos can be used in place of Worcestershire, especially for those watching salt intake.

CHEESE: Parmesan cheese makes everything taste better! For this recipe, shredded mozzarella or small crumbles of bleu cheese or feta will also work.

SEASONINGS: Not much is needed to enhance the sweet flavor of tomatoes, just a little parsley and salt, and pepper. But, if you want a more flavorful recipe, try this DIY Italian seasoning recipe and use it in everything from dressings to dips!

EXTRAS: Oven-baked tomatoes can be roasted along with other veggies like thick sliced red onions.

How to Bake Tomatoes

This recipe is so quick and easy with these simple steps!

  • Slice the core off the top of each tomato and then cut each in half lengthwise (as per recipe below). If necessary, make a small slice on the back of each half so they sit flat in the pan, cut side up.
  • Make uniform cuts about ¼” deep and about ¼” to ½” apart from top to bottom, and side to side in a crosshatch pattern.
  • Drizzle with Worcestershire sauce, seasonings, and parmesan.
  • Bake until they’re heated through and cheese is melted, about 8-15 minutes depending on the size of the tomatoes.
  • Remove them to a serving plate, drizzle with pan juices and garnish with fresh parsley or basil.

Serve tomatoes hot or let them cool and add them to a salad, if desired.

Equipment

Ingredients

  • 4 tomatoes
  • 2-3 teaspoons Worcestershire sauce or soya sauce
  • ¼ teaspoon freshly ground black pepper or to taste
  • 4-6 Tablespoons shredded parmesan cheese or to taste
  • 1 Tablespoon chopped fresh parsley optional, for garnish

Instructions

  • Preheat oven to 400°F.
  • Remove core and cut tomatoes in half across the middle. Score each half by cutting about ¼ inch deep cuts across the cut side of the tomato. Turn the tomato and cut perpendicular cuts (to create a crosshatch pattern).
  • Place cut tomato halves flesh side up in a baking dish. Drizzle with Worcestershire sauce and sprinkle with pepper and parmesan.
  • Bake for 8-15 minutes*, until cheese is melted and tomatoes are heated through.
  • Drizzle with juices in the pan and garnish with fresh parsley if desired.

Notes

  • *Cook time will vary based on the size of the tomatoes.
    • For smaller tomatoes, check for doneness at 8 minutes.
  • Broil for 2 minutes to brown the cheese if desired, especially for shorter cook times.
  • Be careful to not overcook the tomatoes (they're still tasty if they are soft!).
