Turkey Broth vs Turkey Stock

What’s the difference between turkey carcass broth and turkey carcass stock? Or just broths and stocks in general? Stocks are made from simmering the bones in fresh water over a long period of time to extract the flavors. The result is a richly flavored stock that is ready to be used in other recipes. A broth not only uses the carcass, but extra meat or skin, and then some vegetables and herbs are added to it for additional flavor. Broth can be used the same way stock is used, but broth can also be eaten alone, as a clear soup or a health tonic.

Turkey Bone Broth Benefits

Bone broth is all the rage these days, isn’t it? Fish, chicken, pork, and beef can all be made into bone broth. Bone broth is packed with protein, collagen, amino acids and essential fatty acids that makes it a low-cal, low-fat powerhouse of nutrition!

How to Make Turkey Broth From Leftovers

For best results, use the entire turkey carcass, including the neck and be sure to use fresh veggies and herbs to maximize the flavors, even pieces of smoked turkey and the skin adds a deep, rich flavor to the broth!

  1. Preheat oven and roast carcasses only for about 30 to 60 minutes.
  2. Remove from oven, add veggies and herbs and cover with water.
  3. Cover and roast 5 to 6 hours, or until the broth is flavorful.
  4. Remove veggies, herbs, and bones and then pour the broth through a strainer or cheesecloth.
  5. Store immediately, or cool overnight and skim the fat off and then store.

Fun tip: Don’t forget to find the wishbones and dry them out on the counter or in the oven (if you’re in a hurry). Make a wish and hopefully all your dreams will come true. This is one of the favorite things for my kiddos. They love making wishes! If you’re dreaming of flavorful turkey broth, it will come true!

One thing I really love about the oven roasted method is that there is no babysitting. Pop it in the oven, and leave it for hours. (Set it and forget it!) It’s very simple and there is no boiling over or spillage. It takes a little longer than on the stovetop, but it is well worth it in my opinion.

Stove Top Directions

To cook turkey broth on the stove top:

  1. Preheat oven and roast carcasses only for about 30 to 60 minutes.

  3. Bring to a boil, then reduce to a simmer. Boil for 3-4 hours, or until the broth is flavorful.
  4. Remove veggies, herbs, and bones and then pour the broth through a strainer or cheesecloth.
  5. Store immediately, or cool overnight and skim the fat off and then store.

Can You Freeze Turkey Broth?

Turkey broth can be stored in the refrigerator for about a week and in the freezer for up to about 6 months. When freezing homemade turkey broth, ladle the broth into ziptop bags or Stasher Bags with the date on them. Lay them flat to freeze them, and once they’re frozen, store them upright to save freezer space.

Another great idea is to freeze turkey broth in an ice cube tray, transfer the frozen cubes to a freezer zippered bag and then use a cube at a time in a sauce or add to the water when boiling rice, pasta, or sauteing veggies!

Oven Roasted Turkey Broth

It’s easy to make this turkey broth recipe! Use up every piece of that turkey! Making a homemade turkey bone broth will guarantee a large stock of homemade turkey broth for all kinds of recipes like soups and sauces.

Cook Time 5 hours 30 minutes
Total Time 5 hours 50 minutes
Servings 8 -10 cups

Ingredients  

  • 2 turkey carcasses
  • 8 carrot scrubbed clean, tops can be left on
  • 2 onions skins on, quartered
  • 8 stalks celery
  • 2 Tablespoons black peppercorns
  • 4 sprigs fresh parsley
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh sage
  • 1 bay leaf
  • 10-12 cups water *

Instructions 

  • Preheat oven to 350F.
  • Add carcasses to roasting pan. Roast carcasses for 30-60 minutes, until fragrant and bones start to brown slightly.
  • Remove from oven, and if needed, push or arrange bones so they are within the roasting pan. Add carrots, onions, celery, peppercorns, parsley, rosemary, sage, and bay leaf to pan. Cover with water, adding additional water as needed to cover all ingredients.
  • Cover tightly with lid or foil paper. Roast in the oven for 5-6 hours, until broth is flavorful.
  • Using tongs, remove vegetables and bones from roasting pan. Strain broth using cheesecloth or tea towel.
  • Optional: Cool and refrigerate overnight. Skim fat from top of broth.

Notes

*Add boiling water to speed up the process. I usually add about half boiling water (using my kettle) and half hot tap water.
To cook on the stovetop, follow steps as directed, replacing these steps:
Step 3: Remove from oven, and move bones to a large stock pot. Add veggies and herbs and add hot water, adding extra water to cover if needed.
Step 4: Bring to a boil, then reduce to a simmer. Boil for 3-4 hours, or until the broth is flavorful.
