These juicy Marinated Tomatoes are so simple to make, and they make the perfect side dish or salad topper. Just a few simple ingredients and 5 minutes are all you need.
I love to serve this along with thick slices of toasted sourdough soda bread or a French baguette to scoop up all the delicious juices left in the bottom of the bowl.

Ingredients Notes
- Tomatoes: Roma tomatoes are meaty and work well in this recipe. Cherry or grape tomatoes are good too be sure to cut them in half so they can soak up the marinade.
- Parsley: Flat or Italian parsley is recommended for this recipe because of it’s strong, fresh flavor. Curly parsley, dill, fresh basil, oregano, or a basil-parsley combination can be substituted.
- Olive Oil: Has a delicious, smooth flavor you will notice in every bite. Extra-virgin olive oil has a fruity finish.
- Lemon Juice: Adds a clan, fresh flavor. Red wine vinegar, white wine vinegar, or balsamic vinegar can be used but will provide a sharper flavor.
- Garlic: Be sure it is minced fine so the flavor is evenly distributed. Use roasted garlic for a mild and slightly sweet flavor.
- Salt: Helps the tomatoes release their tasty juices. Season to taste.

How to Marinate Tomatoes
- Chop tomatoes into bite-sized chunks
- Whisk marinade ingredients in a large bowl (full recipe below).
- Add tomatoes to marinade, toss to coat, and refrigerate 3 hours or until chilled.

Storing Marinated Tomatoes
- I recommend enjoying this dish within 24 hours, as the tomatoes can become too soft and the texture may change. This recipe is not suitable for freezing.
- For food safety, this dish should be kept refrigerated and used up within 4 days because of the fresh garlic in oil.

Marinated Tomatoes
Ingredients
- 1 pound Roma tomatoes
- 2 Tablespoons minced fresh parsley flat or Italian parsley preferred
- 2 Tablespoons olive oil
- 1 Tablespoon lemon juice
- 1 Teaspoon minced garlic
- ¼ teaspoon salt
Instructions
- Cut tomatoes into bit sized pieces. Remove the stem from the tomatoes, and chop into bite-sized chunks.
- To a medium mixing bowl, add tomatoes, oil, parsley, lemon juice, garlic and salt.
- Gently toss to combine and coat tomatoes.
- Cover and refrigerate for at least 3 hours (or overnight for even better flavors).
