Preheat oven to 375F. Grease baking dish and set aside.
In a medium bowl, combine sugar, crushed strawberries, and cinnamon if using. Set aside.
Unroll dough out flat onto parchment paper (helps with dough not sticking), closing seams if necessary.
Spread dough with butter. Sprinkle with strawberry sugar mixture.
From the longer end, tightly roll dough into a log. Carefully cut the log into 6 equal pieces using a serrated knife or unflavored dental floss.
Add cut rolls to baking dish, cut side up. Drizzle with ¼ cup heavy cream.
Bake for 20 minutes, or until golden brown and dough is cooked through. Remove from oven to rest.
To Make Frosting
In a small bowl, mix cream cheese until smooth using a hand blender on low (or whisk).
Add powdered sugar, cream, and extract and continue mixing until smooth. For a thinner frosting, add 1 teaspoon of cream at a time until you reach the desired consistency.
Assembly
Spread frosting over freshly baked rolls. Allow to set for 5-10 minutes and serve.
Notes
Make sure you roll the dough up as tight as possible. This will prevent the rolls from over expansion in the baking process.
