Peach Bellini

Blend up a sweet and fruity peach Bellini for a fun and delicious summer cocktail.

Ingredients

  • 1 cup frozen peaches peeled and chopped or sliced
  • 2 ounces peach liquor or peach schnapps
  • 5-7 ounces sparkling wine or champagne, chilled
  • 2 Tablespoons sugar or to taste
  • 1 cup ice cubes
  • 2 slices peach optional, for garnish
  • 2 sprigs fresh mint leaves optional, for garnish

Instructions

  • In a blender, blend peaches, peach schnapps, 1 ounce (2 Tablespoons) sparkling wine, sugar, and ice until smooth. 
  • Divide mixture evenly between 2 glasses. Top off each glass with 2-3 ounces sparkling wine. 
  • If desired, garnish with peach slice and mint sprig and serve.

Notes

  • Double the recipe and split between 4-6 people:
2 cups frozen peaches, peeled and chopped or sliced
4 ounces peach liquor, or peach schnapps (½ cup)
10-14 ounces chilled sparkling white wine, or Champagne 
¼ cup sugar, or to taste
2 cups ice cubes
4-6 slices peach, optional for garnish
4-6 sprigs mint, optional for garnish
  1. In a blender, blend peaches, peach schnapps, 2 ounces (¼ cup) sparkling wine, sugar, and ice until smooth. 
  2. Divide mixture evenly between 4-6 glasses. Top off each glass with 2-3 ounces sparkling wine.
