Oven Roasted Beets
This simple roasted beets recipe brings out the sweet, earthy flavor of this root vegetable. Enjoy them as a side dish drizzled with balsamic vinegar, or add them to salads.

Ingredients

beets

Tablespoon
olive oil
optional
salt
to taste
freshly ground black pepper
to taste
Instructions
Preheat oven to 425°F.
Scrub beets clean. Spread foil in a double layer and arrange beets in a single layer. Drizzle with olive oil and sprinkle with salt and pepper.
Bake for 45 minutes for small beets, up to 75 minutes for large beets.
Allow to cool, then use a paper towel to rub off the skins (scrape with a knife if needed). Wear rubber gloves to avoid staining your hands.
Notes
Store beets in the refrigerator for about one week, or freeze for up to 6 months.
