Medium Pot
with lid
Ingredients
1-1 ½
pounds
baby potatoes
2
tablespoons
butter
2
tablespoons
fresh dill
or 2 teaspoons dill (dried)
⅛
teaspoon
freshly ground black pepper
or to taste
Instructions
Add 2 cups water to the bottom of a pot.
Wash potatoes and cut in similar sized pieces, approximately ¾ inch. Add to a steaming basket, place on top of pot (or in pot) and cover pot.
On medium-high heat, steam potatoes for 18-20 minutes. Check after 18 minutes, if fork tender, remove from heat.
Add cooked potatoes to a bowl, add butter, dill, and pepper, and toss gently to coat with butter and herbs. Garnish with more dill and serve!
Notes
Store leftovers in an airtight container in the fridge for up to 4 days, or store cooled potatoes in zip bags in the freezer for up to 8 weeks.
Reheat in the microwave or oven, and refresh by adding butter or olive oil and fresh dill.
Add salt to taste if desired.
