Season chicken with salt and pepper on both sides. In a large skillet on medium high, heat olive oil. Once oil is shimmering, brown the chicken for 2 to 3 minutes per side. Remove chicken from skillet and add to slow cooker.
To the same skillet, add butter, garlic, and Italian seasoning. Whisk together and saute for 1 minute.
Add flour (if using) and cook for 30 seconds. Add broth, heavy cream, and parmesan and whisk to combine. Once bubbling, cook for 2 minutes.
Pour sauce over the chicken, then top with sun dried tomatoes.
Cover and cook on high for 1½ to 2½ hours*, or until chicken reaches 165℉ on an instant-read thermometer.
Taste and season with salt and pepper. Serve over pasta or rice. Garnish with chopped basil.
