rainbow carrots
Instructions
Preheat oven to 425F.
In a medium bowl, mix oil, honey, salt, and pepper together. Add carrots and toss to combine (or brush onto carrots, covering completely).
Add carrots to baking tray in a single layer.
Bake for 30-35 minutes, turning carrots every 10 minutes or so, until carrots are cooked to your liking and sides are lightly browned.
Notes
Leftovers will keep in a covered container for up to 5 days.
