¼teaspoonfreshly ground black pepperor to taste, plus more for garnish
½pintgrape tomatoeshalved, or cherry tomatoes (and/or 1 avocado, thinly sliced)
In a small bowl, mix together ricotta cheese, 2 Tablespoons basil, green onions, garlic, ¼ teaspoon salt, and ¼ teaspoon pepper until well combined.
Meanwhile, toast bread lightly.
Spread about 2 Tablespoons of the ricotta cheese mixture on each slice of toast (divide evenly). Add 7-8 grape tomato halves to each slice. Sprinkle with basil. Drizzle with olive oil (and balsamic glaze if using).
Lightly sprinkle with additional salt and pepper to taste. Enjoy!
