Core and cut apples using the apple cutter. To prepare using a knife, place the apple upright on a cutting board. Cut from top to bottom, around the core in four pieces and cut each piece in half. Discard the core.
Add apples, water, lemon juice, cinnamon, and vanilla to Instant Pot.
Using Manual, set Instant Pot to 10 minutes on high pressure. When cooking is complete, allow natural release.
Once pressure is released, use an immersion blender or other blender until reaches desired consistency. Use caution and blend in small batches if using a blender when the apples are hot.*
Notes
*If using an immersion blender, to prevent hot apples from splattering, hold a pot lid or other splatter guard in front of the blender and Instant Pot while blending.
Peeling the apples is unnecessary. The peels will add flavor, pectin and other nutritious goodies.
Refrigerate applesauce in a covered container for up to one week.
Freeze portions for up to 4 months in zip top freezer bags, or stasher bags.
