In a skillet on medium low heat, melt butter, add garlic and parsley, then cook for 1 minute. Add fresh parsley.
Add shrimp and cook until they begin to turn from grey to pink. Do not overcook.
Place one shrimp in each hole in an escargot dish*. Distribute the garlic butter mixture evenly over each shrimp. Sprinkle ¼ cup cheese over each escargot dish.
Place on a baking sheet, then place under the broiler for 2-3 minutes until the cheese is melted and a bit crispy.
Squeeze a lemon wedge over each dish, and serve with extra lemon wedges (optional).
Notes
If you do not have escargot dishes, simply place lightly cooked shrimp in a baking dish, and cover with cheese. Broil as directed.
