These quick refrigerator pickles are so easy to make! The simple brine, made with vinegar, salt, water and honey, turns sliced cukes into crunchy and zesty pickles in just 1 day!

Ingredients

pound
small cucumbers
about 2-3, thinly sliced (⅙ inch thick)
½-1
small onion
thinly sliced (1/16 inch)

white vinegar

honey

kosher salt
Instructions
Add cucumber and onion slices to a mason jar or other container(s).
In a measuring cup or bowl, whisk together the vinegar, honey, water, and salt. Pour over the cucumbers and onions and cover. Gently shake the jar.
Refrigerate 24 hours.
Notes
Nutrition calculated with a portion of the brine.
Refrigerate quick pickles for 4 and 6 weeks. Add fresh sliced cucumbers and onions to the brine during that time to make more sweet pickles.
