Sprinkle some salt and pepper onto both sides of the cube steak, and set the rest aside.
In a shallow breading tray or dish, mix 1½ cup all purpose flour, ½ cup cornstarch, remaining pepper and salt, 1 teaspoon smoked paprika , 1 teaspoon onion powder, 1 teaspoon garlic powder, and 1 teaspoon baking powder.
To a liquid measuring cup add 1 Tablespoons vinegarand 1 cup milkand stir. This creates a buttermilk mixture.
In a medium bowl, whisk 2 large eggs. Add buttermilk mixture and whisk again.
Dip both sides of beef into flour mixture and shake off any excess.
Dip beef into liquid, then dip into the flour mixture again.
Allow the beef to rest on parchment paper for 10 minutes.
In a skillet, heat ½ cup vegetable oil (oil should be about ¼ inches deep) Fry steak, only 1 or 2 at a time, 3 minutes per side.
Set browned beef on a wire rack and set in a preheated 250˚F oven.
Country Gravy
Using the same skillet, drain oil leaving the brown bits and about 2 Tablespoons of oil. Heat to medium heat and add 4 Tablespoons butter to melt.
Add 4 Tablespoon all purpose flour½ teaspoon pepper, and stir well for 2 minutes to cook the flour. Using a whisk, slowly add add 3 cups milk, and stir well until lumps are gone.
Turn heat to medium and bring to a simmer. Cook until the gravy becomes thick then reduce heat to low and add ½ cup heavy cream. If it becomes too thick, slowly add a bit more milk.
Season with salt, and more pepper if needed. Pour gravy over fried steak when ready to serve.
