butter
softened

brown sugar
packed

corn syrup
dark preferred

egg
slightly beaten

currants
or raisins

premade or homemade, NOT prebaked
Instructions
Preheat oven to 350°F. Place individual tart shells on baking tray if applicable.
In a medium bowl, cream together butter and brown sugar.
Add corn syrup, egg, and salt until mixed through. Fold in currants.
Divide mixture evenly between unbaked tart shells.
Bake 18-20 minutes, or until filling is just set and crust is light brown.
Notes
Tarts may be frozen for up to 3 months. To defrost, unwrap and let stand at room temperature for one hour.
