Grilled Zucchini

small zucchini
or 2 large zucchini
2
Tablespoons
olive oil
1
clove
garlic
minced
½
teaspoon
Italian seasoning
or dried oregano
zest and juice of ½ lemon
plus more juice for serving if desired
½
teaspoon
kosher salt
or to taste,
½
teaspoon
freshly ground black pepper
or to taste
Instructions
Preheat grill to medium-high.
Cut zucchini in half lengthwise* and place on a tray, in a zip top bag, or in a bowl.
Add oil, garlic, Italian seasoning, zest, lemon juice, salt, and pepper. Toss to coat zucchini with seasoning.
Grill about 4-6 minutes on each side or until cooked.
Remove from grill, sprinkle with additional lemon juice if desired, and serve immediately.
Notes
*For large zucchini, cut into rounds ¾” thick and grill about 3-5 minutes each side.
Zucchini can be threaded onto skewers, if desired. Soak wooden skewers in water for 1 hour before grilling to avoid becoming charred.
Refrigerate leftovers in a covered container in the refrigerator for 2-3 days.
Reheat on the stovetop or under the broiler.
