In a medium bowl, whisk together Caesar Dressing ingredients (or shake in a mason jar or cruet). Add salt if desired.
To a large bowl, add kale and croutons. Add about ⅔ of the dressing and toss well. Add more dressing as desired. Sprinkle with parmesan cheese and serve.
Store Kale in refrigerator for about 4 days.Keep remaining dressing in the refrigerator for about 2-3 days. If stored longer, there is a risk that the garlic, which has extremely low acidity, may produce botulism, a serious toxin, and that is not a risk worth taking.
