Blueberry Cobbler is a simple and delicious dessert that uses fresh or frozen blueberries, and topped with a biscuit-style batter then baked to golden perfection!
Preheat oven to 375°F. Grease a 2 quart baking dish and set aside.
In a large bowl, mix together blueberry mixture ingredients. Pour into baking dish.
In the same large bowl, stir together 1 ¼ cup flour, ⅓ cup sugar, baking powder, and cinnamon. Add egg, milk, oil, and vanilla and stir until combined into a thick batter.
Using a cookie scoop or a large spoon, drop batter over the blueberries by the spoonful. Cover most of the fruit (it won’t be fully covered).
Bake for 35-40 minutes, until topping is golden and the blueberries are bubbling.
