Add the brie to a brie baker or a ramekin. Place the brie on a baking tray and place in the oven. Bake uncovered approximately 8-10 minutes.
Meanwhile, add blackberries, lemon juice, honey, lemon zest, and rosemary sprig to a small pot. Bring to a boil on medium heat, stirring occasionally. Reduce heat (to medium low or low) and simmer blackberry mixture for 8-10 mins, breaking up blackberries with a wooden spoon and stirring occasionally.
Remove brie from the oven and top with blackberry sauce. Serve hot with crackers, crostini, or a baguette.
*You can add rosemary leaves in place of a rosemary sprig. Remove most of the leaves before adding to the top of the brie.
