Smoked Tomatoes
Don't waste those precious smoke fumes when you're finishing up a pork shoulder or beef brisket. Get some tomatoes on the vine and throw them in the preheated smoker and you've got yourself some amazing smoked tomatoes. Perfect for a salsa or soup!

tomatoes
medium size, ripe but firm, ripened on the vine or roma
Instructions
Preheat smoker to 250°F.
Place 4-6 tomatoes on grate and smoke for 30 minutes or until they are slightly golden and still firm.
Remove from smoker and eat warm or cool. Cool overnight for Smoked Tomato Gaucamole.
